Italian-Style Quebec Grain-Fed Veal Cutlets au Gratin

  • 2 Quebec Grain-Fed Veal cutlets, 115 g (4 oz) each
  • 50 ml (3 tbsp) olive oil
  • Salt and pepper
  • 125 ml (1/2 cup) tomato sauce
  • 125 g (1/2 cup) mix of parmesan and mozzarella cheese


  1. In a frying pan, heat oil on high and quickly brown the grain-fed veal cutlets on both sides. Season with salt and pepper.
  2. Place the cutlets on a cookie sheet, add tomato sauce and cover with cheese mix.
  3. Brown in the oven under the upper element on high (broil).
  4. Serve on pasta of your choice.
